2 trimmed chicken breasts, grilled, cooled and diced
1/2 c. celery, diced
1/2 c. light mayonnaise
1/2 t. salt
1/2 t. pepper
4 small brioche buns, split
Optional: sliced avocado, lettuce leaves
In a large bowl, mix the chicken, celery, mayonnaise, salt and pepper. Stir until well combined. Spread onto brioche buns; garnish with avocado and lettuce leaves, if desired. Serves 4.
