2 to 4 small sweet potatoes 1-1/2 lb. boneless ham 1/4 c. brown sugar, packed 1/2 t. dry mustard
Arrange unpeeled sweet potatoes in a 5-quart slow cooker. Place ham on top of sweet potatoes. Combine brown sugar and mustard in a cup; spread over top of ham. Cover and cook on low setting for 6 hours, or until a meat thermometer inserted in thickest part of ham reads 145 degrees. To serve, remove ham and sweet potatoes to a platter; let cool for a few minutes. Slice ham and sweet potatoes, removing potato skins if desired. Serve with juices from slow cooker spooned over all. Makes 4 servings.
