2 c. all-purpose flour 3 c. whole-wheat flour 1 T. sugar 1 T. plus 1/2 t. active dry yeast 2-1/2 c. warm water
Combine first 3 ingredients together; set aside. Sprinkle yeast over warm water; set aside until bubbly. Pour into a large mixing bowl; gradually mix in 4 cups flour mixture. Knead dough while adding
the remaining flour until dough is smooth and elastic, about 5 to
8 minutes. Place in a greased bowl; turning once to coat both sides. Cover; let rise until double in bulk. Punch dough down; shape into a loaf and place in a 9"x5" loaf pan. Cover and let rise until double in bulk; bake at 375 degrees until golden, about 45 minutes. Makes
8 servings.
