1 lb. Italian sausage, thickly sliced 1 T. olive oil 1 c. onion, diced 1 clove garlic, minced 1 c. carrots, sliced 1 t. dried basil 2 zucchini, diced 16-oz. can chopped tomatoes 10-oz. can beef broth 2 c. cabbage, finely shredded 1 t. salt 1/4 t. pepper 15.8-oz can Great Northern beans 1 c. small pasta
Brown sausage in oil in a deep saucepan. Add onion, garlic, carrots and basil; heat 5 minutes. Stir in zucchini, tomatoes, beef broth, cabbage, salt and pepper. Bring stew to a boil; reduce heat and simmer, covered, for one hour. Add beans and cook an additional 10 minutes. Stir in pasta and cook an additional 10 minutes until pasta is tender. Makes 8 servings.
