1 to 2 zucchini, chopped 1 onion, chopped 4 tomatoes, chopped 1 green pepper, chopped Italian seasoning to taste 8-oz. pkg. shredded mozzarella cheese
Melt butter in a skillet over medium heat. Add zucchini and onion; cook for 5 minutes, until onion is golden. Spoon zucchini mixture into a lightly greased 2-quart casserole dish; stir in tomatoes, green pepper and seasoning. Top with cheese. Bake at 350 degrees for 25 minutes, or until cheese is melted. Serves 4.
