2 c. creamed or whole corn 2 eggs, beaten 1/2 c. cracker crumbs 1/2 c. all-purpose flour 1/2 t. baking powder 1 t. salt 1/4 t. pepper oil for frying
Combine corn, eggs and cracker crumbs; set aside. Sift together flour, baking powder, salt and pepper; add to corn mixture and stir well. Heat a small amount of oil in a skillet over medium-high heat. Drop batter into oil by tablespoonfuls, flattening slightly. Pan-fry until golden, about 3 minutes, turning once. Drain on paper towels.
Serves 4 to 6.
