1 to 2 t. oil 1 potato, peeled and sliced into thin rounds Optional: 1/2 onion, sliced 4 slices white bread salt and catsup to taste
Heat oil in a cast-iron skillet over medium heat. Add potato slices; cook until tender and golden on both sides. Remove to a paper towel-covered plate. Sauté onion until translucent, if using; remove to plate. Layer potatoes and onion on 2 bread slices. Add salt and catsup; top with remaining bread slices. Serves 2.
