1 c. chocolate milk 1 egg, beaten 2 T. butter, melted 2 T. baking cocoa powder 1 c. buttermilk biscuit baking mix 1/2 gal. peppermint ice cream, softened Garnish: sprinkles
Combine milk, egg and butter in a large bowl. Add baking cocoa and baking mix; whisk until smooth. Add . cup batter for regular waffle iron or 1/3 cup for mini waffle iron to a preheated, greased waffle iron. Bake according to manufacturer’s directions. To serve, top each waffle with ice cream and top with other waffle for top. Roll in sprinkles. Wrap in plastic wrap and freeze until ready to serve. Serves 6.
