1-1/3 c. all-purpose flour 2/3 c. cornmeal 1 T. baking powder 1/2 t. salt 1 c. milk 1/3 c. pure maple syrup 1/4 c. butter, melted 2 eggs, lightly beaten
In a large bowl, combine flour, cornmeal, baking powder and salt;
mix well. Add remaining ingredients; stir just until combined.
Batter will be lumpy; do not overmix. Pour batter into a greased
8"x8" baking pan. Bake at 400 degrees for 25 to 30 minutes, until
golden and a toothpick inserted in the center tests clean. Cut into
squares; serve warm. Makes 9 servings.
