2 to 3-lb. pork loin, fat trimmed salt and pepper to taste 2 T. oil 4 cloves garlic, minced 20-oz. can pineapple chunks 1/4 c. soy sauce 1/2 c. brown sugar, packed
Season pork loin with salt and pepper; set aside. Heat oil in a large skillet over medium-high heat. Brown pork on each side for 2 to 4 minutes, until golden. Transfer to a 5-quart slow cooker; rub with garlic and set
aside. In a bowl, combine pineapple chunks with juice and soy sauce. Spoon around pork in slow cooker. Sprinkle brown sugar evenly over pork. Cover and cook on low setting for 5 to 6 hours, until tender. Slice
