2 c. self-rising cornmeal mix 1/4 c. sugar 1 t. cinnamon 1-1⁄2 c. milk 1 c. cooked sweet potato, mashed 1/4 c. butter, melted 1 egg, beaten
Whisk together all ingredients just until dry ingredients are moistened. Spoon batter into a greased 8" cast-iron skillet or pan. Bake at 425 degrees for 30 minutes or until a toothpick inserted in center comes out clean. Makes 6 servings.
