2 boneless, skinless chicken breasts 2 T. chive and onion-flavored cream cheese, softened and divided 2 T. butter, divided salt and pepper to taste dried tarragon to taste 2 slices bacon
Flatten chicken to 1/2-inch thickness; spread one tablespoon cream cheese over each chicken breast. Top each with one tablespoon butter, salt, pepper and tarragon. Roll up chicken; wrap one slice bacon around each chicken breast; secure with a toothpick. Place seam-side down in a lightly greased 8"x8" baking pan. Bake at 400 degrees for 25 minutes, or until juices run clear when pierced with a fork. Serves 2.
