3/4 c. reduced-fat mayonnaise 1/2 t. ground ginger 1/2 t. salt 3 c. cooked boneless, skinless chicken breasts, cubed 1-1/2 c. red seedless grapes, cut in half 2/3 c. celery, sliced 1/2 c. green onions, sliced Optional: 1/2 c. walnut pieces Garnish: lettuce leaves, toasted bread or crackers
In a large bowl, combine mayonnaise, ginger and salt. Fold in chicken,
grapes, celery, green onions and walnuts, if using. Cover and chill at
least 2 hours or overnight. Serve on lettuce leaves, slices of toasted
bread or crackers. Makes 6 to 8 servings.
